Recipe
This curry blend is enjoyed in pubs up and down the country as well as in some of the finer establishments

The recipe works well with all of our curry powders

Ingredients

Curry powder 3 tbsp
2 medium onions, chopped
Garlic, crushed 2-4 cloves
Oil 4 tbsp
Chicken, lamb, etc, diced 500g
Canned, chopped tomatoes 400g
Mango chutney 2 tbsp
Lemon / Lime juice 2 tbsp
Coriander or Parsley 2 tsp
Rice
Salt
Black pepper

Method

Boil salted water for rice
Fry onions and garlic in oil until soft
Add meat and curry powder and fry gently for 2-3 minutes
Blend in tomatoes and their juice, chutney and lemon / lime juice and coriander
Bring to the boil and simmer gently until meat is tender
Add salt and ground black pepper to taste
